DAILY ACTIVITY (ENGLISH VERSON)



MONDAY,28 JANUARY 2019

     Welcome to back Idong_cheff.!!!

 Today is a happy day because today is first day in the kitchen after a long vacation.Approximately a pleasant year is blessed by Allah SWT. Monday, January 28, 2019 the first day of practice was quite tiring and fun because on the first day of the week of practice we met with new seniors who had finished completing their training.

 On Monday we started to practice 2 products, namely PUFF PASTRY and EGG DHISHES. after we checked grooming and divided our group into doing and being guided by new seniors, it was quite pleasant because we were very much helped by them as they explained what we didn't know. at that time we practiced PUFF PASTRY and EGG DHISHES will be continued after break.

 Before we left oneline and waited for Mr. Iical to explain the material about the DHESHES EGG, when Iical explained there were some of our friends unable to do things because of their GC on Friday they were not involved and they were sanctioned for cleaning the mean kitchen as a whole and the funniest when one of them named Suherman Ismail made a splash he climbed the exsai in the room by Mr.Ical.

 After we rested and carried out our obligations as Muslims, we immediately took the second product practice, namely EGG DHISHES, there was a group before, when we started doing, it was tiring and quite draining because I myself and my friends hadn't had breakfast. but it feels satisfying because there is a lot of knowledge that we can get from it.

 When doing Dhishes egg I feel uncomfortable because the tools we use are incomplete and have been used by other friends, well we have to wait for others to finish their products and we are just starting, we have 8 DHESHES EGG, Omelette, Poach egg , Boiled egg (soft, hard, medium), Egg Scramble, Turn Over, Sunny side up egg. In the middle of finishing the product, the call to prayer calls us to face the almighty.

 After break pray ashar  we continue our pending prudok and finish it. after everything is finished we bring our products to the pastry to show to the ical and the results are satisfactory, then the product is divided and fed, after that we receive the oniline and divide the group into general cleaning (GC). After gc we gather and listen to a little direction from Mr. ical and read the prayer home. So for my story today guys guys !!! I apologize if there are words that are not pleasing because I am only a human who does not escape mistakes

Puff Pastry 
1 kg              Hard Flour
800gr           fat
15gr             Salt
700mL         Water
Procedure :'
1. Place the first quantities of flour and butter in the bowl. with a paddle attachhment , mix at low speed untill will blended.
2. Dissolve the salt in the cold water.
3. Add the salted water to the flour and mix it at low speed untill a sof dough forms. Do not overmix
4. Removing the dough from the mixer and let rest in the refrigator 20 minutes.
5. Cream the last quantities of butter and flour at low speed in the mixer untill the mixture is about the same consistency as the dough, neiyher too hard not too soft.
6. Roll the butter into the dough. give the dough 4 four-folds or 5 three-folds.

Egg Dishes
1. Sunny side up
How to make :
- 2pcs egg 
- butter
-seasoning salt and papper

~lelehkan butter pada saute pan
~letakkan ring cutter,lalu masukkan 2 butir telur
~berikan air secukupnya dan seasoning egg dengan salt and papper, lalu tutup
~letakkan pada piring saji

2.Turn Over
How to make :
-2 pcs telur
-olive oil
seasoning salt and papper

~masukkan olive oil secukupnya pada saute pan
~letakkan ring cutter
~masukkan 2 butir telur, lalu tutup beberapa saat
~ balik telur hingga keseluruhan telur matang
~letakkan pada piring saji

3.Omlette
how to make :
- 2 pcs telur
- condiment : tomato, mushroom,cheese
-butter
-seasoning salt and papper

~pecahkan telur lalu letakkan dalam mangkuk
~aduk telur lalu tambahkan condiment yang diinginkan
-~lelehkan butter pada saute pan,lalu masukkan telur
~aduk dengan arah ke atas hingga telur berbentuk bulan sabit
~letakkan pada piring saji

4.Scrumble egg
how to make: 
- 2 pcs telur
- fresh milk
-butter
-seasoning salt and paper

~~pecahkan telur lalu letakkan dalam mangkuk
~aduk telur lalu tambahkan fresh milk
-~lelehkan butter pada saute pan,lalu masukkan telur
~aduk dengan arah ke atas dan ke bawah hingga telur berbentuk seperti bulir yang menggumpal
~letakkan pada piring saji


5.Hard Boil Egg
how to make :
-menggunakan mesin sous vide selama 45 menit dengan suhu 160 derajat farenheit

6.Soft Boil Egg
how to make :
-menggunakan mesin sous vide selama 45 menit dengan suhu 145 derajat farenheit

7.Medium Boil Egg
how to make : selama 45 menit dengan suhu 150 derajat farenheit
-menggunakan mesin sous vide 

8.Poach egg
how to make :
-menggunakan mesin sous vide selama 45 menit dengan suhu 145 derajat farenheit
-lalu di boil kembali di air untuk menghilangkan selaputnya
